Hiyashi Chuka (Cold Noodle Salad)

Ramen is usually prepared in hot soup. However, when the weather is very hot, some of us may prefer something cooler. Similar to soba, though less prominent, ramen also has a chilled counterpart. This recipe is great to be served as a salad or as a main course if you want something light. OLYMPUS DIGITAL CAMERA
